Pour la petite histoire, mon fils recevait un copain et réfléchissant au goûter que j’allais leur préparer je lui demande s’il aime la crème de marron, il faut dire que nous habitons une région où ce délice est à l’honneur. Il me répond qu’il l’adore et me raconte alors, les yeux brillants, que celle de son grand père est délicieuse et qu’il leur avait fait la surprise d’une bûche de Noël à la crème de marron l’année précédente.
De mon côté j’avais ramassé des châtaignes avec des amis ardéchois et réalisé beaucoup de crème de marron à cette occasion à ne plus savoir qu’en faire. Je n’ai pas résisté et je me suis lancée dans la réalisation d’un goûter sur mesure pour maintenir cette lumière dans son regard jusqu’au goûté en lui annonçant qu’il aurait de la bûche de Noël à l’avance (nous sommes courant novembre et oui vous vous rappelez j’ai ramassé des châtaignes en Ardèche) et à la crème de marron !
C’était un peu dangereux car je prenais le risque de me mesurer à la crème de marron de grand-papa mais quand on y met du cœur sans esprit de compétition on touche forcément le cœur de l’autre, non ?

Pour cette recette vous aurez besoin :
Pour le biscuit roulé :
- 5 œufs
- 120g de sucre de canne non raffiné
- 120g de farine de sarrasin maison (à base de graine décortiquée ou de chez Kokoji )
- 2 pincées de sel
Pour la garniture et la couverture :
- Un pot de crème de marron de 500g
- 200g de chocolat noir
- 3 belles cuillères à soupe d’huile de coco désodorisée bio ou de margarine cuisson bio
- Un peu de lait végétale pour mouiller le biscuit après cuisson
Ustensiles et matériels :
Un fouet – 2 saladiers – une Maryse – papier sulfurisé – 1 torchon propre humidifié – une plaque de cuisson – un pinceau alimentaire
Préparation du biscuit : ici
Préparation de la couverture et montage :
- Au bain mari faites fondre le chocolat avec l’huile de coco (ou la margarine) et laissez refroidir
- Etalez délicatement la crème de marron (à votre convenance, pas d’obligation à finir le pot) sur votre biscuit après avoir humidifié légèrement, au pinceau, votre biscuit avec un peu de lait végétal
- Roulez votre biscuit et laissez-le refroidir sur une grille de refroidissement (sans son torchon) avant de le placer 10 min au réfrigérateur
- Sortez la bûche et placez du papier sulfurisé sous votre grille (sur laquelle est placé votre buche)
- Versez uniformément une première couche de chocolat sur la bûche et replacez la buche au réfrigérateur
- Dès que le chocolat est figé recommencer l’opération précédente jusqu’à ce qu’il n’y ait plus de chocolat
